When my husband and I decorated our daughter’s nursery, we wanted to make a height chart that was portable. We aren’t planning on living in this house forever, and it always so sad when families move and leave behind their children’s heights for someone else to paint over. Thank you Pinterest for an easy solution! We just bought a 6 ft piece of pine for pretty cheap at the lumber yard, sanded and varnished it. And added the numbers and tick marks like a ruler. (We totally cheated and got decals from the Little Diddy shop on Etsy.) So, her nursery was completed over a year ago, and ahem, we just did the height chart this weekend. To be fair, she can’t stand up yet… 😉
I don’t know about you but crafting always makes me hungry. Probably from all the stress it creates. So, guys, I freakin’ love this salsa. It’s so delicious and refreshing. It makes a huge batch and we never, ever have leftovers. Ever. You’ll love it; I promise. It’s simple to make, and you probably have the ingredients already. Do not make it when you’re alone. Just a word of warning.
Avocado & Black Bean Salsa
2 16oz cans black beans, drained and rinsed
2-3 medium avocados, diced
1 large garden tomato, diced
1 medium red onion, diced
2 garlic cloves, minced
1 tsp oregano
1 tsp cumin
1/2 tsp thyme
2 tbsps minced cilantro
2 tbsps red wine vinegar
1/2 c olive oil
1. Mix together olive oil, vinegar, onions and garlic with all your spices.
2. Stir in beans and mix well.
3. Add tomatoes and cilantro. Avocados last.
I have (surprisingly) not tried to freeze this. If you do, let me know how it comes out defrosted! It’s best with fresh ingredients, and so its more expensive to make in the winter. (Or if you’re trying to eat local, it’s completely out of the question in February.)
